Lime ice cream

This recipe is a hybrid of artisanal nieve de limón from Oaxaca, and creamy lime ice cream. Refreshing and delicious, it is perfect for hot summer days.


Base 1:

2 c water

1 c sugar

1/2 c lime juice

2 TBSP Lime peel, grated


Base 2:

2 c whole milk

2 egg yolks

1/4 c sugar

1/4 c heavy cream

1 tsp clear vanilla


In a medium saucepan, combine the water, sugar, lime juice and peel. Boil for 5 minutes. Cool to room temperature. Strain the liquid into a dish and refrigerate till very cold.

In a clean, medium saucepan, whisk together the milk, yolks, and sugar. Bring just to a boil, stirring constantly. Remove from heat. Pour into a separate container and cool completely in the refrigerator. Once cold, stir in the heavy cream and the vanilla.

Prepare your ice cream maker according to manufacturers instructions. Add both the prepared ice cream bases together, and churn till ready.
